Spiced White Chocolate Latte

Spiced White Chocolate Latte

INGREDIENTS

· 1 cup strong brewed coffee
· ½ cup milk
· 5 tablespoons DCD Spiced White Sipping Chocolate
· 2 dollops whipped cream
· 1 tablespoon DCD Chardonnay Caramel Sauce, for drizzling

DIRECTIONS

1. Pour coffee and milk into a microwaveable container and heat in the microwave until warm. Stir in DCD’s Spiced White Sipping Chocolate until completely melted and smooth.
2. Pour into 2 coffee mugs. Dollop with whipped cream, and drizzle with DCD’s Chardonnay Caramel Sauce.

MAKES 2 SERVINGS.

Spiced Chocolate Appletini

Spiced Chocolate Appletini

Ingredients:

- 1½ oz DCD Chocolate Martini Mix
- 1 oz apple vodka
- 1 oz apple brandy (recommended: Applejack)
- Cinnamon

Ingredients Garnish:

- DCD Chef-Series Dark Chocolate, melted
- DCD Chardonnay Caramel Sauce
- Graham cracker crumbs

Tools:

- DCD Martini Shaker

Directions:

1. Rim a martini glass with melted dark chocolate or Chardonnay Caramel Sauce and dip in graham cracker crumbs, if desired. Refrigerate 5 minutes to set.
2. Fill the Martini Shaker with ice. Pour in Martini Mix, vodka, and brandy.
3. Attach Shaker lid and shake martini for 30 seconds. Pour into the prepared martini glass, and garnish with a light sprinkle of cinnamon.

Chocolate Turtle Martini

Ingredients

- 1 ounce DCD Chocolate Martini Mix
- 1 ounce vanilla vodka
- 1 ounce pecan-flavored liqueur
- 1 cup crushed ice
- DCD Chef-Series Chocolate (for garnish)
- Toasted pecans (for garnish)

Dark Chocolate Shots

INGREDIENTS

· 1½ cups whole milk
· ¾ cup DCD Dark Sipping Chocolate
· 1-2 tablespoons orange liqueur (Recommended: Grand Marnier)
· 1 packet DCD Frosty White Chocolate Smoothie Mix
· ¾ cup heavy cream
· ¼ cup orange juice
· 1 teaspoon grated orange zest, plus a little more for garnish
· 2 oz. DCD Chef-Series Dark Chocolate (1 bar)
· 8 small orange wedges/slices

DIRECTIONS

1. Heat milk and Sipping Chocolate in a medium saucepan over medium-low heat, whisking until chocolate pieces are completely melted and mixture is hot, but not simmering or boiling. Remove from heat and whisk in orange liqueur. Set aside.
2. Prepare orange cream by combining Smoothie Mix, cream, juice and zest in a medium bowl. Beat with an electric mixer until soft peaks form.
3. Melt chocolate in microwave at 20-second intervals, stirring in between until smooth. Rim 8 2-oz. shot glasses with melted chocolate, and ladle in hot chocolate. Dollop a small amount of orange cream on top, and garnish with a little orange zest and an orange wedge, if desired

Chocolate Coconut Martini

Ingredients

- 1 ounce DCD Chocolate Martini Mix
- 3 ounces coconut rum
- 1 ounce amaretto
- 1 cup ice
- DCD Chef-Series Chocolate (for garnish)
- Toasted coconut (for garnish)

Directions:

Shake all ingredients (except garnishes) in your favorite cocktail shaker and pour into martini glass. Garnish with chocolate, then coconut if desired.

Triple Chocolate Mousse Shooters

Triple Chocolate Mousse Shooters

INGREDIENTS

· 4 oz. DCD Chef-Series Dark Chocolate
(2 bars), chopped
· 2 cups heavy cream, divided
· 1 tablespoon light corn syrup
· 1 tablespoon Chambord or Kahlua liqueur, optional
· 2 packets DCD Mousse Mix
· 4 oz. DCD Chef-Series White Chocolate (2 bars)
· 4 oz. DCD Chef-Series Dark Chocolate (2 bars)

TOOLS

DIRECTIONS

1. To make first layer (ganache), place 4 oz. chopped dark chocolate into a medium bowl. In a small saucepan over medium-high heat, bring ½ cup heavy cream to a boil. Immediately pour over chocolate, and let sit for 2 minutes. Add corn syrup and stir together until smooth, mixing in liqueur if desired. Set aside.
2. Prepare dark chocolate mousse. Place contents of 1 DCD Mousse Mix packet and ¾ cup heavy cream into a bowl and whip with an electric mixer until soft peaks form. Set aside.
3. Melt remaining dark chocolate in a microwave at 20-second intervals, stirring in between until smooth, and immediately pour into the whipped cream. Mix vigorously with the Silicone Spatula until mousse is thoroughly combined and uniform in color.
4. Prepare white chocolate mousse the same way as the dark, using the second Mousse Mix
packet and replacing the dark chocolate with the white chocolate.
5. Spoon 1 tablespoon chocolate ganache into each shot glass, and layer approximately 2
tablespoons dark chocolate mousse, followed by 2 tablespoons white chocolate mousse. Refrigerate until serving. Garnish with chocolate
shavings.

MAKES 10-12 SHOOTERS.

INGREDIENTS:

DIRECTIONS:

1. In a saucepan, heat the milk and cream until hot, but not simmering.
2. Reduce heat and add the Frosty White Smoothie Mix, stirring until completely dissolved.
3. Remove from heat and pour into 2 mugs.
4. Garnish with a light dusting of cocoa powder and/or chocolate shavings.

Yield: 2 servings

Chocolate Healthy? Can chocolate make you healthier?

Maybe it is fitting Valentines Day Hearts be filled with Chocolate?


Chocolate for health? Chocolate for Heart Health: The Darker the Better - ABC News -
"Researchers at San Diego State University... suspected that dark chocolate consumers would see the most health benefits from the dark chocolate, which among the various types of chocolate has the highest concentration of flavonoids. Flavonoids are compounds produced by plants that function as important pigment molecules. They’ve gained popularity as the substance responsible for the cardioprotective effects of red wine."

Mayo Clinic's website has an interesting article by Katherine Zeratsky, R.D., L.D.here: Can chocolate be good for my health?  Zeratsky recommends the following:
"Choose dark chocolate with cocoa content of 65 percent or higher. Limit yourself to around 3 ounces (85 grams) a day, which is the amount some studies have shown to be helpful. Because this amount may provide up to 450 calories, you may want to cut calories in other areas or step up the exercise to compensate."


Cleveland Clinic also weighs in about the relative health benefits of chocolate.  

Heart-Health Benefits of Chocolate Unveiled

  • Flavanoids help protect plants and repair damage, these anti-oxidant effects impact us when we eat these plant foods
  • Anti-oxidants help the body protect and repair itself from damage due to free radicals
  • Flavanols "are the main type of flavonoid found in cocoa and chocolate. In addition to having antioxidant qualities, research shows that flavanols have other potential influences on vascular health, such as lowering blood pressure, improving blood flow to the brain and heart, and making blood platelets less sticky and able to clot.
    These plant chemicals aren’t only found in chocolate. In fact, a wide variety of foods and beverages are rich in flavonols. These include cranberries, apples, peanuts, onions, tea and red wine."
 "What about all of the fat in chocolate?
You may be surprised to learn that chocolate isn’t as bad for you as once believed.
The fat in chocolate comes from cocoa butter and is made up of equal amounts of oleic acid (a heart-healthy monounsaturated fat also found in olive oil), stearic and palmitic acids. Stearic and palmitic acids are forms of saturated fat. You may know that saturated fats are linked to increases in LDL cholesterol and the risk of heart disease.
But, research shows that stearic acid appears to have a neutral effect on cholesterol, neither raising nor lowering it. Although palmitic acid does affect cholesterol levels, it only makes up one-third of the fat calories in chocolate. Still, this does not mean you can eat all the dark chocolate you’d like.
First, be careful about the type of dark chocolate you choose: chewy caramel-marshmallow-nut-covered dark chocolate is by no means a heart-healthy food option. Watch out for those extra ingredients that can add lots of extra fat and calories. Second, there is currently no established serving size of chocolate to help you reap the cardiovascular benefits it may offer, and more research is needed in this area. However, we do know that you no longer need to feel guilty if you enjoy a small piece of dark chocolate once in a while.
So, for now, enjoy moderate portions of chocolate (e.g., 1 ounce) a few times per week, and don’t forget to eat other flavonoid-rich foods like apples, red wine, tea, onions and cranberries."
